Ingredients

½ cup of flour
1 egg
¾ cup pre boiled sweet potato (cold)
1 tsp cinnamon
2 tbsp almond milk (more if needed)
Drop of vanilla
2 tbsp maple syrup
Coconut oil

 

Method

1) Mix all ingredients apart from coconut oil. Combine well until batter forms.


2) Heat coconut oil in pan over low – medium heat. Ladle small amount of batter into the pan to make small circles (about 4 should fit in a pan).


3) Cook for about 7mins on each side until browning. Pile up and top with maple syrup and fruit!
