Salad Ingredients

100g quinoa dry
100g lentils dry
1 red onion
1 large cucumber
1 pink lady apple
1 red+1yellow pepper
1 tin of chick peas
75g sultanas

Instructions

Pre-cook quinoa and lentils – allow to cool.
Deseed the cucumber- chop all other ingredients  to small dice
Combine in a bowl and mix thoroughly
Mash the garlic cloves, squeeze 1 lemon, combine olive oil+ red wine vinegar and whisk.
Stir through the dressing into the mix

Dressing Ingredients

2 parts olive oil
1 part red wine vinegar
3 mashed cloves of garlic
1 fresh lemon – juiced
Salt n pepper
Chilli flakes to taste
