Garlic (skin on)
1/2 Butternut squash (skin on)
1/2 can aduki beans
1/2 teaspoon ‘Ras el Hanout’
1 teaspoon smoked paprika
1 teaspoon garlic powder
1) Roast the butternut squat, onion add garlic
towards the end. Remove from oven when
all ingredients are slightly charred and soft.
2) Squeeze the garlic out of the skin and put all roasted vegetables into a food processor and
blend. Add the beans, spices, breadcrumbs and an egg and blend until smooth.
3) Roll the mixture into golf ball size balls, pat flat and fry in a little oil or grill. Here the burgers are served with potato wedges and coleslaw and chives.
