Ingredients

Salad Leaves of your choice
Rocket
Half Avocado
Beetroot
Feta Cheese
Cherry Tomatoes
Cucumber
Red and Orange Peppers

Generally the more colourful the better.
Colourful vegetables have higher vitamin and mineral content.

Avocado
I love Avocados which are high in healthy fats adding it to my salad improves the absorption of fat soluble vitamins A, D, E and K it supports skin health and possibly boosts the immune system.

Beetroot
Beetroot can help to lower Blood Pressure
It is also claimed to boost athletic performance
Beetroot can help build immunity and relieve respiratory problems.

It can take up to 3 months to see benefits so hurry and start adding beetroot into your diet today.

Enjoy this salad for lunch with a crusty roll or wrap or perhaps in the evening with some steamed fish or vegetarian alternative and new potatoes ( or perhaps my favourite sweet potato chips)
