A large handful of fresh herbs such as Oregano or Basil.
1/2 cup of nuts (I used a mix of cashews and pecans)
1/2 cup of olive oil or some other nut oil (only enough to loosen the pesto)
1 cup of prawns
A one inch slice of raw salmon cut into chunks
2 cloves of garlic, minced
1 drizzle of oil for cooking.
Nutritional Yeast or Parmesan cheese for dressing

Put the spiralized courgette onto steam or cook on the vegetable setting in the microwave, set aside.

Using a hand blender blend the nuts, 2 cloves of garlic, the oil and the herbs into a loose paste, set aside.

Add the drizzle of oil to a pan, add the prawns, salmon and garlic, cover and leave to cook over a low heat for a few minutes (until the salmon is just cooked).

When the salmon is just cooked add the courgetti and the pesto to the pan while still over the heat and give it a thorough stir incorporating all of the ingredients.

Serve with a sprinkle of parmesan cheese or nutritional yeast.
